The green tea is today the most consumed tea variety in the world. It is generally based on third and fourth tea leaf. Although manufacturing methods may vary between producing countries, the main steps remain similar. After harvest, the leaves are fast heated to a temperature exceeding 100°C for a few seconds at several minutes. This phase, called roasting, is done just after picking in order to stop oxidation neutralizing the enzymes responsible for this phenomenon. The leaves are then Rolled and shaped different traditional styles, such as Sencha, the Chung Mee or the Gunpowder.
