Pai Mu Tan or white peony consists of the terminal bud and the beginning of the first leaves. It also comes from the beautiful province of Fujian. This tea is an excellent antioxidant but it is also weak in theine. Pai Mu Tan can infuse several times by increasing the infusion time each time. It is therefore a paradoxically economical tea, which allows to obtain different flavors at each new infusion.
