The farm structure in Uganda is similar to that in Ethiopia and Kenya. Given that 85% of all coffee grown is grown by small farmers of less than 2.5 hectares, Uganda has immense potential to produce high quality specialty coffees in small lots. As in Ethiopia; Uganda's small farmers usually combine their coffee with traditional food crops. Banana trees provide both shade for coffee makers and food for families. The coffee tree blooms on average twice a year. The families of farmers pick by hand the ripe cherries selectively and deplete them with the help of manual depulpers. The coffee is fermented and washed with clear water. It is then dried on raised beds.
