SILTEPEC is located in the central part of Chiapas, on the edge of the biosphere reserve, El Triuno, which houses the endemic bird, « El Questzal ».
This ecological region represents 30% of the flora of the entire territory of Chiapas.
The story of El Jaguar coffee
This region benefits from a microclimate that creates a cloud forest, due to the rainforest area of Soconuscu around the Novillero River. Thanks to its wet weather, very shaded, cool nights and excellent soil, it creates the ideal environment for the development of specialty coffee.
El Jaguar is harvested and processed by hand by small producers. After harvest, it is removed, fermented and washed before being dried naturally in the sun.
« Por mas coffee » is a government institution that provides training in modern agricultural techniques, as well as disease control, access to high-yield and disease-resistant plants, and access to fertilizers, certification, financing and education.
